Welcome to Honeymoon Chocolates, where every bar is crafted with passion, purpose, and a touch of sweetness from nature. Our journey began in 2016 in a dorm room kitchen when co-founders Cam and Haley, driven by a shared love for chocolate, started experimenting with bean-to-bar craft chocolate as a hobby. What began as a simple pastime soon evolved into a mission to create chocolate that not only delights the senses but also aligns with our values of health, sustainability, and ethical production.
At Honeymoon Chocolates, we believe that enjoying chocolate should be a guilt-free experience. That’s why we’ve chosen to sweeten our chocolate solely with raw, unfiltered honey, avoiding refined sugars and artificial additives altogether. Our chocolate is free from lecithin, palm oil, soy, and gluten, and we ensure that our cacao is heavy metal tested, using only cacao that meets California's stringent daily limits. We are proud to say that our chocolate is as pure as it gets.
We source our organic cacao from Tanzania and Uganda through trusted partners like Uncommon Cacao and Meridian Cacao, paying fair farm gate prices to support the farmers who grow our precious cacao. From there, each batch is carefully ground, tempered, molded, and hand-packaged, with packaging that is both recyclable and compostable.
Our commitment to honey goes beyond just a sweetener. Raw honey not only enhances the flavor profile of our chocolate but also offers numerous health benefits, including a lower glycemic index and trace amounts of beneficial enzymes, vitamins, and minerals. Plus, a portion of our proceeds is donated to support honeybee research, helping to protect these vital pollinators.

Why do you sweeten your chocolate with honey instead of cane sugar?
We believe that chocolate should be both delicious and nourishing. Honey, while sweet like sugar, offers a wealth of benefits that cane sugar simply doesn’t. It has a lower glycemic index and contains trace amounts of beneficial enzymes, vitamins, and minerals like calcium and potassium. Unlike refined sugar, which can have detrimental health effects, honey has been safely used by humans for thousands of years. This makes it the perfect natural sweetener for our chocolate, aligning with our commitment to health and sustainability.
Was avoiding refined sugar a personal dietary choice?
While neither of us have strict dietary restrictions, we both strive to make intentional and health-conscious choices in our diets. Cam's passion for health and ecological consciousness was a significant driving force behind our decision to replace cane sugar with honey. We wanted to create a product that reflected these values while offering a healthier alternative to traditional chocolate.
What challenges do honey bees face, and how does it affect your mission?
Honey bees are essential pollinators, responsible for about 35% of the crops we consume. However, they face numerous challenges, including Colony Collapse Disorder and exposure to harmful pesticides like neonicotinoids. Without bees, many crops would suffer, leading to a ripple effect in our food supply. This is why we are committed to supporting honeybee research and raising awareness about the critical role bees play in our ecosystem.
Which came first, your passion for chocolate or honey?
Our passion for chocolate came first. It all started when Cam gifted Haley some cacao nibs for her birthday, which led to us experimenting with chocolate-making. The discovery that we could sweeten our chocolate with raw honey was a game-changer, combining our love for chocolate with a natural, healthful sweetener.
Did you have a "chocolate epiphany" that inspired your journey?
Absolutely! Our chocolate epiphany came when we tasted a 55% coconut milk and Ben Tre bar from Marou. The intense flavor was unforgettable, and it sparked our desire to share that experience with our friends and family. Another memorable moment was trying Dick Taylor’s 72% Belize bar during the trip when Cam proposed to Haley. These flavors left a lasting impact and continue to inspire our creations.
How did you learn to make chocolate?
We are completely self-taught. Our journey began with endless hours of research, experimenting, and learning from online resources like The Chocolate Alchemist’s website. Over time, through trial and error, we honed our craft and developed our unique approach to chocolate-making.
Were there any other chocolate makers that inspired you?
Yes, several chocolate makers have inspired us along the way. We admire the work of The Chocolate Alchemist, Marou, Dick Taylor, Dandelion, and Manoa. These brands have successfully told their stories on a national level, and they continue to inspire us as we grow our own brand.
How did you decide on the sweetness level for your bars?
Honey is naturally sweeter than cane sugar by weight, which presents a unique challenge when determining the right sweetness level for our bars. We recently discovered a variety of honey that more closely matches the sweetness intensity of cane sugar, which has helped us fine-tune our recipes to achieve the perfect balance.
Were you surprised that only a few chocolate companies use honey as a sweetener?
Yes, we were surprised. With the growing demand for health-conscious food options, we expected more fine chocolate makers to explore natural alternatives like raw unfiltered honey. However, we’re proud to be among the few who have embraced this sweetener, offering a unique product in the world of craft chocolate.
Do you have a favorite bar in your lineup?
We love all of our bars, but if we had to choose, Cam’s favorite is the 70% Dark Chocolate Raspberry, while Haley’s is the 50% Dark Strawberry Milk Bar. Each bar holds a special place in our hearts, and we hope they bring the same joy to you!
